It's Italian

I love food.

Which is partially why I gained so much weight over my life.

I have not made meatloaf in a long time and I was needing to make something that would be good to bring to a friend who is recouping from surgery. Then I thought...

MEATLOAF

SO I got out my old recipes and a new one was born.

I gathered my ingredients and added them to a bowl.

TIP: I hate mixing meat with my hands...It is a texture thing. So I always keep a box of disposable gloves in my kitchen.

Here is the one I made for my friend after the all mixed up.

For our house I use one of these...

TIP: I am all about portion control to get myself back on track.

This baking dish is just the thing to use. Perfect sized little meatloaves. When first eating solids after surgery you may only be able to eat 1/2 of a "loaf".

I then make my topping glaze.

Very simple 2 ingredient glaze.

Then I topped the loaves.

 T’s Italian Meat Loaf

16 servings

16 oz ground turkey
16 oz ground sweet italian turkey sausage
1c oats
1 egg
1 c milk of choice
1 medium onion, diced
1 bell pepper, diced
1t sea salt
1/4t ground pepper
10oz can tomato soup
1t italian seasoning
For glaze:
2T Dijon mustard
1/2c lo/no sugar ketchup


Preheat oven to 350
Add all ingredients other the 2 for the glaze in a bowl.
Mix well.
Place into pans.
Put glaze ingredients in a small bowl and mix.
Top loaves with glaze.
Put in oven and cook for 60 min or until cooked through.
